The changes in food production and consumption:
In the last century, Icelandic food production and consumption have changed a lot, many traditional dishes are no longer made, and new ones have been made instead. Supply has become entirely different and more diverse; transport and food preservation are better, and changes in residence make it challenging to link many traditions to one specific area. If any of these traditions are to be revived, it is necessary to look carefully at consumption patterns and how consumers' tastes have changed. Therefore, new traditions may need to be adapted and created.
